This coffee cake overnight french toast casserole is the perfect lazy weekend breakfast or for a holiday or special event.
This past weekend we got together with family for brunch to celebrate my mom’s birthday. I made this coffee cake overnight french toast casserole and it was to die for!!! Sweet french toast is topped with a delicious cinnamon crumble and then covered with a maple syrup cinnamon glaze. This is a great recipe that you can easily prepare the night before and then the morning of, just toss in the oven.
This recipe would also be perfect for a Mother’s Day brunch! Serve with my Momosa and one of these precious Mother’s Day printables.
I also love to bring this when you’re going to someone’s house for a holiday and want to bring something for the hostess. Take breakfast off their hands the next day. Bring it over with a little card with the baking instructions and tell them to pop it in the fridge until the next morning. I also did this with my overnight breakfast strata.

The flavors of coffee cake and french toast come together perfectly in this breakfast bake. And while it may look like there are a few steps involved, it is seriously such an easy recipe! Prepare the night before and then the morning of, just bake in the oven! You could also top with some whipped cream and berries too!

Coffee cake overnight french toast casserole
Ingredients:
- 1 loaf of bread (you can use any kind. I used brioche. I also think challah works well)
- 1 1/4 cups milk
- 1 cup heavy cream
- 6 eggs
- 3 egg yolks
- 2 tsps vanilla extract
- 1 tsp almond extract
- 1 cup brown sugar
- 1 tsp cinnamon
- 1 80z block of cream cheese, cut into 1 inch cubes
For the streusel topping:
- 1 1/2 cups flour
- 1 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 stick of butter, melted
For the glaze:
- 1/4 cup maple syrup
- 1 cup flour, sifted
- 3 Tbsp milk
- 2 tsp cinnamon
Directions:
1.) Start by spraying a large baking dish with nonstick cooking spray.
2.) Cut the bread into cubes and spread into the bottom of the baking dish.
3.) In a large mixing bowl, beat the milk, heavy cream, eggs, extracts, brown sugar and cinnamon. Then pour the liquid over the bread in the baking dish.

4.) Top with the cubes of cream cheese evenly spaced.

5.) In a separate mixing bowl, combine the ingredients for the streusel and let sit until it becomes crumbly.
6.) Sprinkle the stresuel mixture over the top.
7.) Cover and refrigerate for at least 4 hours. I usually leave overnight until ready to bake the next morning.
8.) When ready to bake, preheat the oven to 350 degrees F.
9.) Bake covered for 30 minutes.
10.) Then uncover and bake for another 30 minutes.
11.) While the casserole is in the oven, prepare the glaze mixture in a bowl, whisking together all ingredients.
12.) Remove the casserole from the oven when finished and drizzle the glaze on top.
