Chicken Caesar Salad Baked Potato
This is the ultimate girl dinner. The other night the boys were at golf and I was on my own for dinner. We had leftover chicken cutlets in the fridge so I whipped up a chicken Caesar salad. And then I thought, why not serve it with some fries? Well I didn’t have fries but I did have potatoes so I did the next best thing. I made me a baked potato and topped that sucker with my chicken Caesar salad. Serve with a Diet Coke to round out the meal. Super easy, and felt indulgent!
This is a great way to use leftovers or if you’re looking for a quick family meal. Sharing my recipe below.

Chicken Caesar Salad Baked Potato
Ingredients:
- 1 Yukon gold potato
- 1 head of Romaine lettuce
- Leftover chicken, cut into strips
- Parmesan cheese (to your heart’s content)
- My homemade Caesar salad (get the recipe here)

Directions:
1.) Preheat the oven to 400 degrees F.
2.) Drizzle the potato with olive oil, and place on a parchment lined baking dish. Gently poke some holes in the potato with a fork. Bake for about 40 minutes until soft.
3.) While the potato is baking, in a separate bowl, prepare the salad.
4.) Remove the potato from the oven and slice down the middle. Add a pat of butter, salt and pepper.
5.) Top with the salad.
6.) Drizzle with Caesar dressing and shaved Parmesan.
