Enjoy summer’s bounty of sweet peaches and corn in this light and delicious orzo salad.
When it comes to summer, I just can’t get enough of all the fresh sweet peaches and the corn!!! This sweet peach and corn orzo salad is the perfect light dish to go with some grilled chicken or steak or bring to your summer BBQs.
You will love this recipe because it’s minimal ingredients, super easy to make, and bursting with summer flavors. Now the trick is, you want the corn to be raw. It’s so much sweeter that way! And

Sweet peaches and corn summer orzo salad

Ingredients
- half box of orzo
- 2-3 large peaches, pitted and diced
- 4 ears of corn, cut off of the cob
- 1 cup arugula
- 1/4 cup olive oil
- 1 1/2 Tbsp Mike’s hot honey
- a healthy amount of course sea salt (to taste)
Directions:
1.) Bring a pot of water to a boil and then boil the orzo until al dente. Drain.
2.) In a large bowl, add the orzo, corn, peaches, and arugula.
3.) In a smaller bowl, combine the olive oil, hot honey and sea salt, whisk until combined.
4.) Pour the hot honey mixture over the salad and toss well.
