Thanksgiving Salad

If there’s one thing I’m known for in my family, it’s being Queen of the salad creations. And this Thanksgiving salad is sure to be a favorite.

Seasonal autumnal vegetables like roasted brussels sprouts and sweet potatoes are served on a bed of arugula and topped with glazed pecans, apples, dried cherries and a homemade maple vinaigrette for the perfect healthy Thanksgiving side dish. I love to fill my plate with this salad and turkey and then some helpings of my other favorite sides like stuffing and sweet potato casserole.

So if you’re in charge of bringing a vegetable dish to Thanksgiving, forget the boring peas and carrot medley and wow everyone with this delicious and colorful salad.  Sharing my recipe below.  (And for more salads that don’t suck, check out my winter salad).

Thanksgiving Salad

Ingredients:

  • 2 cups arugula
  • 2 cups shredded brussel sprouts
  • 3 sweet potatoes diced
  • 1 shallot diced
  • 2 honeycrisp apples diced
  • 1 bag of glazed pecans, chopped
  • 1 bag dried cherries or dried cranberries
  • Goat cheese or gouda (to your heart’s content)
  • 1 Tbsp honey or maple syrup
  • 2 Tbsps dijon mustard
  • 2 Tbsp balsamic vinegar
  • 1/4 cup olive oil
  • salt

Directions:

1.) Preheat oven to 400 degrees F.

2.) On a baking sheet lined with parchment paper, spread the brussels sprouts, sweet potatoes and diced shallots. Drizzle with olive oil, salt, pepper and toss thoroughly. Bake until roasted.

3.) While the veggies are roasting, in a salad bowl add the arugula, apples, pecans and cherries.

4.) Top the salad with the roasted brussel sprouts, sweet potatoes and shallots.

5.) In a mason jar or smaller bowl, add the olive oil, balsamic vinegar, honey(maple syrup),  and dijon mustard, mixing well until combined.

6.) When ready to serve, sprinkle cheese on top of the salad and lightly drizzle with the dressing, season with salt.
