Red Velvet Waffles
These Red Velvet Waffles are fluffy, sweet and super indulgent when you want to treat yourself or someone special. They are made with red velvet cake mix and topped with a cream cheese whipped topping you can prepare ahead of time so that you can have breakfast or brunch served in a flash. These are perfect for Valentine's Day or Mother's Day.
- 1 box red velvet cake mix
- 1 1/2 cups flour
- 1 1/2 cups buttermilk
- 1/2 cup oil
For Whipped Cream Topping
- 8 oz cream cheese room temp
- 1 cup confectioner's sugar
- 1 cup heavy whipping cream
- 1/2 tsp vanilla extract
Combine all of the ingredients for the waffle mix in a mixing bowl and mix together.
Preheat the waffle iron and spray with nonstick cooking spray.
Scoop the waffle batter onto the iron and cook according to waffle iron instructions.
Remove with spatula when done and place on a plate, allow to cool slightly.
While the waffles are cooling, prepare the whipped cream topping. (Or you can prepare the whipped topping ahead of time and store in the refrigerator in a sealed container until ready to serve). In a stand mixer, add cream cheese and confectioner’s sugar, mix until combined.
Add in the heavy whipping cream and vanilla extract and mix until forms a whipped consistency.
Top with the cream cheese whipped topping, some chocolate chips or sprinkles.
