Leprechaun Bait Chex Mix Recipe

This Leprechaun Bait chex mix recipe is a great snack for St. Patrick’s Day! This is a favorite recipe amongst all my boys, my husband included.  It is seriously addicting and won’t last long! This chex mix is also a cute snack to give to friends at school. I’m sharing the recipe below.

Leprechaun Bait Chex Mix Recipe

Ingredients:

  • Honey chex cereal
  • Lucky charms cereal
  • pretzels
  • white chocolate chips
  • green M&M’s
  • chocolate gold coins

Directions:

Start by lining a large baking tray with parchment paper.

Pour the cereals and pretzels on the parchment paper.

In a bowl, pour the white chocolate chips. Melt in the microwave, stopping at about 30 second intervals to stir.

Once the chocolate is melted, use a fork to drizzle on top of the cereal and pretzel mixture.

Add the green M&M’s on top.

Mix together then allow to cool.

Break apart into pieces.

Add in some chocolate gold coins. I like to store this chex mix in a large glass canister because it looks cute on the counter or table and then just scoop out into bowls as you snack. Or you can bag for little treats for school. I’ve linked some cute gift tag stickers below.

Lucky Charms Ice Cream Sandwiches

These Lucky Charms Ice Cream Sandwiches are beyond magically delicious. They are outrageously addicting. Whether you are making them for St Patrick’s Day, to beat the summer heat or just for a special treat, they are something that everyone will love and are super easy to make! Scroll down for my recipe.

Lucky Charms Ice Cream Sandwiches

Lucky Charms Ice Cream Sandwiches

Ingredients:

  • 4 cups of Lucky Charms Cereal
  • 1 bag of mini marshmallows
  • 1/2 stick of butter
  • ice cream

Directions:

  1. Start by spraying a baking sheet with nonstick baking spray.
  2. In a microwave safe bowl, combine the marshmallows and butter and put in the microwave for 2 minutes, stopping to stir in at each minute interval.
  3. Once the marshmallows are completely melted and combined with butter, mix in the lucky charms and stir well so that all the cereal pieces are evenly coated with marshmallow.
  4. Pour the cereal-marshmallow mixture onto the baking sheet and press down with a rubber spatula, flattening as you go.
  5. Allow to cool and then cut into squares to make your sandwiches. You can also use cookie cutters as well. I love this pack of fun cookie cutters on Amazon for all holidays!
  6. When you are ready to serve, smear 1 scoop of ice cream on one of the Lucky charm bars, sandwiching in between.

These lucky charms ice cream sandwiches are the perfect treat whether you are celebrating St Patrick's Day, looking to cool down or just want something sweet. Be careful though, they are magically delicious, and super addicting! But also easy to make!

Reuben Salad

This Reuben Salad has all the classic flavors of the traditional sandwich minus the carbs and grease that you would normally get from the pub or diner. It’s super easy to prep for lunch or a light dinner and the kids ate it too! This is a great option if you’re following low carb or keto. Scroll down for my recipe for my Reuben Salad below.

Reuben Salad

Ingredients:

  • Rye bread torn into chunks
  • 1-2 Tbsp melted butter
  • 1-2 heads of romaine, torn
  • 1/2 lb of deli corned beef sliced into strips.
  • 1/2 lb of deli swiss cheese sliced into strips.
  • 1 cup of sauerkraut or cole slaw (I do cole slaw since I don’t like sauerkraut)
  • Russian dressing

Directions:

  1. First make your rye bread croutons. Line a baking sheet with foil. Place your rye bread chunks on the baking sheet and toss with melted butter. Put in the oven until golden brown.
  2. While the croutons are baking, prepare your salad. I have found that if you’re serving a group of people, you can make a board and place each ingredient in separate bowls so that people can make their own individual salads. Or just combine all ingredients in one large bowl and toss.
  3. Top with croutons right before serving.

Ingredients
