These are the best pumpkin magic bars. Similar to the classic seven layer bars, these are layered with pumpkin and a buttery, gingersnap crust which make them the perfect fall dessert.

My great aunt used to make the best magic bars. You may also know them as Seven Layer Bars, or Hello Dolly bars. At every family function, I knew that I could look forward to her special cookie bars. If you’re not familiar with Magic Bars they are a classic throwback recipe with a graham cracker crust, sweetened condensed milk, chocolate chips, nuts,and shredded coconut.

This month, our theme for the Cozy Creative Collaborative was pumpkin since it’s October! So I decided to make a pumpkin rendition of these magic bars.

The best pumpkin magic bars, pumpkin seven layer bars

The best pumpkin magic bars

A gingersnap buttery crust is layered with gooey sweetened condensed milk, pumpkin puree, butterscotch and white chocolate chips, crushed pecans and sprinkled with shredded coconut for the perfect fall dessert bar.

Ingredients:

  • 1 sleeve of honey graham crackers, crushed
  • 15 gingersnap cookies, crushed
  • 1/2 stick of butter
  • 1 can sweetened condensed milk
  • 1 cup of pumpkin puree
  • 1 Tbsp pumpkin pie spice
  • 1 cup white chocolate chips
  • 1 cup butterscotch chips
  • 1 cup chopped pecans
  • 1/2 cup shredded coconut

Directions:

1.) Preheat your oven to 350 degrees F.

2.) Using a food processor, crush up the graham crackers and gingersnaps so that you have 1 cup of each. Tip – If you don’t have a food processor, you can place them in a large ziploc bag and crush with a meat tenderizer or rolling pin.

3.) Combine the crushed graham crackers and gingersnaps in a bowl.

4.) Melt half a stick of butter and pour into the bowl with crushed cookies, mixing.

5.) Line a 9×9 baking dish with parchment paper.

6.) Spread the graham cracker-cookie mixture into the lined pan, pressing firmly.

7.) In a bowl mix the pumpkin puree, sweetened condensed milk and pumpkin pie spice.

8.) Spoon the pumpkin mixture on top of the cookie crust.

9.) Sprinkle with butterscotch and white chocolate chips, chopped pecans and shredded coconut.

10.) Bake for about 30-35 minutes, until the edges start to turn golden brown.

11.) Chill then slice and serve!

Tip – If your bars are still pretty gooey, place in the fridge or freezer until hardened and then slice.

Store in an airtight container.

The best pumpkin magic bars

These pumpkin magic bars are similar to the traditional seven layer bars. Layered with a gingersnap crust, sweetened condensed milk, pumpkin, butterscotch, white chocolate, and nuts, these are an easy and delicious fall dessert!

Ingredients

If you are addicted to pumpkin cold foam coffees from Starbucks then this post is for you! I’m sharing my recipe to make your own at home so you can skip the lines. Scroll down to learn how to make pumpkin cold foam coffee. This is the perfect afternoon pick me up and pairs well with my pumpkin magic bars too!

Pumpkin cold foam

If you’re not familiar with it, basically pumpkin cold foam is a foamy creamy topping bursting with pumpkin and fall flavors on top of your iced or cold brew coffee. It quickly became my addiction last fall and I set out on a way to learn how to make it at home.

How to make pumpkin cold foam coffee

Ingredients

  • 1/3 cup heavy cream
  • 1 1/2 Tbsp pumpkin puree
  • 1 tsp of vanilla extract or a shot of Torani french vanilla syrup (I like to use vanilla extract if you don’t like it as sweet)
  • 1/2 tsp pumpkin pie spice
  • dash of salt
  • cold coffee

Directions

In a small bowl or glass, combine all the ingredients above except the coffee.

Pumpkin cold foam coffee

Using a milk frother or an immersion blender, whip all ingredients until it thickens.

Pumpkin cold foam coffee

 

Fill a separate glass with ice and pour your coffee.

Top with your pumpkin cold foam and enjoy!!!!

Pumpkin Spice Snack Mix

Pumpkin spice snack mix

This pumpkin spice snack mix is the perfect combo of sweet and salty with your favorite pumpkin spice flavors. I made a big batch this weekend and the boys have been snacking on it all week. I’m sharing my recipe below.

Pumpkin Spice Snack Mix

Ingredients:

  • 4 cups chex cereal (I used the honey nut flavor but cinnamon would work great too!)
  • 2 cups pretzel bites (My youngest likes the pretzel balls)
  • 2 cups Reese’s pieces
  • 2 cups mixed nuts
  • 1 egg white
  • 1/2 tsp pumpkin pie spice
  • 1 tbsp brown sugar

Directions:

  1. Preheat your oven to 300 degrees F.
  2. Line a baking sheet with parchment paper and spread out the mixed nuts.
  3. In a small bowl combine the pumpkin pie spice and brown sugar
  4. In a separate bowl, crack an egg, keeping the egg white.
  5. Drizzle the egg white over the nuts coating evenly.
  6. Sprinkle the pumpkin pie spice mixture over the nuts and toss. Bake in the oven for about 20 minutes, tossing over every once in awhile.
  7. Remove the nuts from the oven and let cool.
  8. In a large bowl, combine the other ingredients.
  9. Add the nuts once cooled and toss.

Enjoy! If not eating immediately, store in an airtight container or mason jar. Or in this cute pumpkin glass jar below!

Pumpkin Spice Snack Mix

This pumpkin spice snack mix is the perfect fall snack when you're craving something sweet and salty. This makes a great after school snack or for on the go.

Prep Time 25 minutes
Course Appetizer, Snack

Ingredients
  

  • 4 cups chex cereal I used the honey nut flavor but cinnamon would work great too!
  • 2 cups pretzel bites My youngest likes the pretzel balls so that's what I used but you can use any kind
  • 2 cups Reese's pieces
  • 2 cups pumpkin candy corn
  • 2 cups mixed nuts
  • 1 egg white
  • 1/2 tsp pumpkin pie spice
  • 1 tbsp brown sugar

Instructions
 

  • Preheat your oven to 300 degrees F.
  • Line a baking sheet with parchment paper and spread out the mixed nuts.
  • In a small bowl, combine the pumpkin pie spice and brown sugar.
  • In a separate small bowl, crack one egg, separating the yolk from the white. You will use the egg white.
  • Drizzle the egg white over the nuts coating evenly.
  • Sprinkle the pumpkin pie spice mixture over the nuts and toss evenly. Then bake in oven for about 20 minutes. Flip over every so often to bake evenly.
  • Remove the nuts and let cool.
  • While the nuts cool, in a large bowl combine the chex cereal, pretzels, Reese's pieces and candy corn.
  • Once the nuts are cooled, add the nuts to the chex mixture and toss.
  • Store in an air tight container or mason jar.
