Spicy Pineapple Ranch Water

This spicy pineapple ranch water is a refreshing twist on the classic ranch water cocktail. It’s so simple, low carb and can easily be made into a mocktail too!

If you’ve never heard of Ranch Water it’s a light, fizzy drink with tequila, soda water and limes. It’s a great sip in the warm summer months and is very low cal too! One of the other great things about Ranch Water is how easily customizable it is! If you prefer to have a mocktail, simply leave out the tequila for a bubbly drink. Or if you like something more spicy, add some jalapenos, like I did last year. You can see my spicy ranch water recipe here.

With Cinco De Mayo approaching and the summer around the corner, I was inspired to try a new twist with sweet pineapple. The end result was so good!!! I’m sharing my recipe below.

Spicy Pineapple Ranch Water

Ingredients:

  • 1 bottle of Topo Chico or other sparkling mineral water
  • Blanco tequila (I like Casa Amigos and I don’t measure)
  • Pineapple juice
  • Fresh pineapple
  • Sliced jalapenos
  • Lime
  • Tajin spice

Directions:

1.) Start by rimming a glass with some Tajin spice. I took a chunk of pineapple and rubbed it along the rim then dipped it into a plate of the spice.

2.) Fill the glass with some fresh pineapple, sliced jalapenos and ice.

3.) Add some pineapple juice, juice of some lime, tequila and top with Topo Chico.

Enjoy!!!!

Crockpot Chicken Cacciatore

Crockpot chicken cacciatore

If you’re looking for an easy, warm comfort meal, this is it! I hadn’t made this crockpot chicken cacciatore in a long time and I just made it for dinner the other night and I thought, “Why is this not on the rotation?” Chicken in a delicious rich sauce of tomatoes and peppers is packed with flavor and the perfect dinner the whole family will love! Crockpot Chicken Cacciatore

Ingredients:

  • oilve oil
  • 1 pack of boneless chicken thighs (I chose skinless as well but you do you)
  • salt/pepper
  • 1 tbsp chopped garlic
  • 1 can crushed tomatoes
  • 1 large red bell pepper sliced
  • 1 large green bell pepper sliced
  • 1 yellow onion chopped
  • 1 packet of Italian seasoning
  • fresh Basil, chopped

Directions:

1.) Drizzle some olive oil in the bottom of the crockpot.

2.) Add the chicken, sprinkle with salt and pepper.

3.) Add the garlic, tomatoes, peppers, onions and pack of Italian dressing seasoning.

4.) Stir combining all ingredients so that it coats the chicken.

5.) Allow to cook on high for 4 hours.

6.) When ready to serve, top with some chopped fresh basil.

This is great served over pasta or with some bread to sop up all the juice. If you’re trying to watch your carbs I love it over cauilflower rice, spaghetti squash or over green beans.

Reuben Salad

This Reuben Salad has all the classic flavors of the traditional sandwich minus the carbs and grease that you would normally get from the pub or diner. It’s super easy to prep for lunch or a light dinner and the kids ate it too! This is a great option if you’re following low carb or keto. Scroll down for my recipe for my Reuben Salad below.

Reuben Salad

Ingredients:

  • Rye bread torn into chunks
  • 1-2 Tbsp melted butter
  • 1-2 heads of romaine, torn
  • 1/2 lb of deli corned beef sliced into strips.
  • 1/2 lb of deli swiss cheese sliced into strips.
  • 1 cup of sauerkraut or cole slaw (I do cole slaw since I don’t like sauerkraut)
  • Russian dressing

Directions:

  1. First make your rye bread croutons. Line a baking sheet with foil. Place your rye bread chunks on the baking sheet and toss with melted butter. Put in the oven until golden brown.
  2. While the croutons are baking, prepare your salad. I have found that if you’re serving a group of people, you can make a board and place each ingredient in separate bowls so that people can make their own individual salads. Or just combine all ingredients in one large bowl and toss.
  3. Top with croutons right before serving.

If you’re looking for great salad bowls these are my favorite! They’re awesome for pasta too!
