Hot honey pasta salad

Hot honey pasta salad - pasta salad with arugula, peppers, fresh mozzarella, corn and pine nuts with a hot honey sauce

This hot honey pasta salad is sweet, spicy, and about to become a favorite dish for summer.

You all know my love for hot honey! (Remember my apple and brie hot honey flatbreads? Yummm.) This hot honey pasta salad is everything about summer packed in a bowl – sweet, with a little heat, fresh and bursting with color.  Scroll down for my recipe and be sure to pin it!

Hot Honey Pasta Salad

Ingredients:

For the pasta salad

  • 1 box pasta
  • 1 cup of mini bell peppers, sliced
  • 1-2 handfuls of fresh arugula
  • 1 cup corn
  • 1 container mozzarella balls, drained
  • 1/4 cup pine nuts

For the dressing

  • 1/2 cup olive oil
  • 4 Tbsp hot honey
  • 4 Tbsp lemon juice
  • 1 Tbsp red wine vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp Italian seasoning
  • red pepper flakes (to taste)

Directions:

1.) Cook the pasta until it’s al dente, then drain and allow to cool.

2.) While the pasta cools, prepare the dressing. Mix all dressing ingredients in a bowl and whisk together.

3.) In a large bowl, add the pasta, and the rest of the salad ingredients.

4.) Top with hot honey dressing. Sprinkle with pine nuts and mix well.

This hot honey pasta salad is sweet and spicy just how summer should be. This will be your new favorite dish of summer.

Ingredients
  

For the salad

This is one of our family’s favorite dinners, my chicken broccoli and ziti, or CBZ as we call it. Roasted chicken tenderloins and broccoli are served over ziti with an easy, creamy homemade alfredo sauce. This is a great comfort meal for a busy weeknight or if you are looking to take dinner off of a friend’s hands. I’ve made this meal several times for people and it is always well loved.  Sharing my recipe below.

Nicolle’s Chicken Broccoli Ziti- CBZ

Ingredients

  • 1 box pasta
  • 2 heads of broccoli
  • 1 pack of chicken tenderloins
  • salt/pepper
  • olive oil
  • garlic salt (to taste)
  • 4 Tbsp butter
  • 1 1/4 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • squeeze of fresh lemon juice to taste

 

Directions:

1.) Preheat the oven to 400 degrees F.

2.) Line a large baking pan with parchment paper.

3.) Divide the baking sheet into two halves. On one half of the baking sheet add the broccoli. Drizzle with olive oil, salt and pepper and toss.

4.) On the other half of the baking sheet, add the chicken tenderloins. Drizzle with olive oil, salt, pepper and garlic salt and toss until coated evenly.

5.) Bake in the oven until roasted, about 20 minutes.

6.) While the chicken and broccoli is roasting, bring a pot of water to boil.

7.) To the pot, add pasta and cook until al dente then strain and add pasta back to the pot and drizzle with olive oil so that the pasta doesn’t stick.

8.) In a saucepan, melt the butter.

9.) Add the heavy cream to the saucepan and simmer for about 5 minutes, until thickened.

10..) Stir in Parmesan cheese and continue to stir until the cheese has melted.

11.) Pour the sauce over the pasta.

12.) Once the chicken and broccoli are roasted, remove from the oven and add to the pot with the pasta, stir until combined.

13.) Top with a squeeze of fresh lemon juice and some more freshly grated Parmesan.

Serve and enjoy!

  • salt/pepper to taste
  • olive oil
  • garlic salt to taste

  • lemon juice freshly squeezed to taste

This Leprechaun Bait chex mix recipe is a great snack for St. Patrick’s Day! This is a favorite recipe amongst all my boys, my husband included.  It is seriously addicting and won’t last long! This chex mix is also a cute snack to give to friends at school. I’m sharing the recipe below.

Leprechaun Bait Chex Mix Recipe

Ingredients:

  • Honey chex cereal
  • Lucky charms cereal
  • pretzels
  • white chocolate chips
  • green M&M’s
  • chocolate gold coins

Directions:

Start by lining a large baking tray with parchment paper.

Pour the cereals and pretzels on the parchment paper.

In a bowl, pour the white chocolate chips. Melt in the microwave, stopping at about 30 second intervals to stir.

Once the chocolate is melted, use a fork to drizzle on top of the cereal and pretzel mixture.

Add the green M&M’s on top.

Mix together then allow to cool.

Break apart into pieces.

Add in some chocolate gold coins. I like to store this chex mix in a large glass canister because it looks cute on the counter or table and then just scoop out into bowls as you snack. Or you can bag for little treats for school. I’ve linked some cute gift tag stickers below.

Easy Taco Pizza

Easy Taco Pizza

We celebrate Taco Tuesday weekly in our house. But sometimes, I like to switch it up from your typical tacos.  Recently I made Taco Pizza and the entire family loved it! It’s super easy, and quick which makes for a great weeknight meal. (You can also try my crockpot walking tacos which are just fun!!!)

Easy Taco Pizza

Easy Taco Pizza

Ingredients:

  • Ground turkey or beef
  • 1 packet of taco seasoning
  • 2 packages of refrigerated crescent roll dough
  • 1 cup of sour cream
  • 1 8oz package of cream cheese, softened
  • chopped lettuce
  • diced tomatoes
  • 1 cup frozen corn
  • 1 cup Mexican blend cheese
  • Optional – black beans, avocado

Directions:

  1. Preheat your oven to 375 degrees.
  2. Roll out your crescent roll dough and lay it out on a greased cookie sheet, making the crust for your pizza dough and being sure to pinch the perforations.
  3. Bake for 8-10 minutes or until golden brown.
  4. While your crust is cooling, mix the cream cheese and sour cream together until smooth.
  5. Brown your ground beef or turkey, adding the packet of taco seasoning.(You can have this done ahead of time too!) Then drain any liquid.
  6. Once the crust is cooled, spread the cream cheese/sour cream mixture over the crust.
  7. Layer the ground meat on top.
  8. Top with chopped lettuce, tomatoes, corn or any other toppings you desire. (We love to add black beans and avocado too!)
  9. Sprinkle with cheese.

You can enjoy this warm or cold! And for an added crunch, add some crushed nacho chips or Doritos (The way Dude Man prefers)

This will be your family's favorite for Taco Tuesday. Crescent roll dough is topped with all the taco toppings like sour cream, lettuce, ground turkey, tomatoes and all the cheese! Save this recipe for easy taco pizza.
