Magic donuts - a protein packed breakfast or snack

These Magic Donuts are packed with protein to keep the little ones (and adults) feeling full and satisfied.

Now that we are back in the swing of things with school, I’ve been trying to get back into meal planning. (You can get my meal planning cheat sheet when you subscribe!)

These magic donuts are a fun protein packed breakfast or after school snack to provide fuel and energy. You can also use the batter to make these into muffins but I think donuts are more fun! Sharing my recipe below.

Magic Donuts

Ingredients:

  • 3 scoops of Kodiak pancake mix
  • 2 scoops or vanilla protein powder
  • 1 cup of vanilla Greek yogurt
  • 2 eggs
  • 1 1/2 cups almond milk
  • chocolate chips and sprinkles (optional and measure with your heart)

Ingredients for protein packed breakfast for kids - Kodiak pancake mix, Orgain protein powder, greek yogurt made into donuts or muffins

Directions:

1.)Preheat the oven to 350 degrees F.

2.) In a large mixing bowl, combine the pancake mix, protein powder, Greek yogurt, eggs and milk. Mix well until everything is smooth.

3.) Add in the chocolate chips, sprinkles or any other extras you desire!

4.) Lightly spray your donut pan with non-stick baking spray.

5.) Fill the donut pan with the batter.

6.) Bake in the oven for about 12-15 minutes, until the edges are slightly golden. You can also use a butter knife and insert into the batter. When the knife comes out clean, you know they are done baking.

7.) Allow to cool then store in an air-tight container in the fridge.
