This Greek chicken pasta salad is packed with protein and can easily be made ahead of time. This salad is made with fresh cucumbers, tomatoes, kalamata olives, onions and feta served over pasta and grilled chicken with a homemade tzatziki dressing so it’s bursting with Mediterranean flavors.

It’s Wednesday so it’s time for another Wednesday Salad. This week I’m mixing up your traditional pasta salad and giving it a little Mediterranean flair for this Greek chicken pasta salad.

Why you will love this Greek chicken pasta salad

This is the perfect spring or summer dish for a party or light meal on a hot night. It’s packed with protein, and is a great way to use leftover chicken. This salad can easily be made ahead of time for the week too so that you can nosh throughout the week! I like to make the homemade Tzatziki because it just tastes so much fresher but if you’d like you can use store bought too!

Greek chicken pasta salad

Ingredients:

For the salad:

  • 1 box of pasta cooked al dente
  • 3 boneless chicken breasts, cooked, diced
  • 1 jar of kalamata olives, drained, pitted and diced
  • 1 cucumber diced
  • 1/4 red onion diced
  • 1/4 cup cherry tomatoes, diced
  • 1 block of feta cheese, cut into cubes

For the dressing: (or store bought is fine)

  • 1 cup plain Greek yogurt
  • 1/2 cup cucumber, finely grated and water squeezed out.
  • 1 Tbsp lemon juice
  • 1 tsp extra virgin olive oil
  • 1 Tbsp garlic, minced
  • 1 Tbsp fresh dill, chopped
  • 1 Tbsp fresh mint, chopped
  • salt (to taste)

Directions:

1.) If you’re using a homemade Tzatziki dressing, start by making the dressing. In a medium sized bowl combine all dressing ingredients and then refrigerated. If you’re using store bought, skip this step.

2.) In a large bowl, combine the salad ingredients – the pasta, veggies, chicken, and feta cheese.

3.) When ready to serve, top with Tzatziki dressing and mix well.

Ingredients
  

For the salad

  • 1 box pasta cooked al dente

The best Caesar Pasta Salad

This is the best Caesar pasta salad ever. Made with a homemade Caesar dressing, this is a great summer meal, whether on it’s own or with chicken, steak or fish.

I love me some Caesar salad. It’s my fave summer meal on it’s own with a chilled glass of Sauvy B, with some fries (girl dinner), or topped with some grilled chicken.

I combined my love of Caesar salad and pasta to make this Caesar pasta salad. Adding pasta or grains to veggie salads is a great way to bulk up a salad while also keeping it lighter and not so heavy on carbs. This salad is topped with a homemade Caesar dressing that is super easy to make and I promise you’ll never want to use the bottled stuff again!

This salad can be prepped ahead of time which makes it an easy weeknight meal, side dish or to bring to a BBQ or party. Scroll down for my recipe.

The Best Caesar Pasta Salad

*Modifications – a traditional Caesar dressing has anchovies in it. I do not like anchovies, so I used capers instead, to get that salty, briny flavor.

I like to make the dressing ahead of time and keep in a bottle so that you can enjoy throughout the week.

Ingredients

For the salad:

  • 1 box pasta
  • 1 head of romaine lettuce chopped
  • 1 cup Parmesan cheese shreds
  • croutons

For the dressing:

  • 1 cup mayonnaise (or you can do Greek yogurt)
  • 1 Tbsp Dijon mustard
  • 1 Tbsp Worcestshire sauce
  • 1 tsp minced garlic
  • 1 tsp capers  (you can also use anchovies or anchovy paste)
  • juice of 1 lemon
  • 1/2 cup grated Parmesan cheese
  • salt/pepper

Directions:

1.) Boil one box of pasta until al dente then drain and set aside.

2.) Prepare the dressing.  Add all of the dressing ingredients into a large bowl and whisk together.

3.) In a large salad bowl, add the lettuce, pasta, and Parmesan cheese.

4.) When ready to serve, top with the Caesar dressing, tossing well so it’s all evenly covered. Then top with croutons.

It’s Wednesday and you know what that means, time for another Wednesday Salad! This week I’m sharing my recipe for my spring chopped cobb salad.

Lately, I have been on a kick with chopped salads. If you are not chopping your salads, you are missing out! Every single ingredient is chopped small so that you get a bite of everything at once! Plus, research also suggests that when all your veggies are chopped it’s actually healthier for digestion and easier to absorb all the good nutrients.

This salad is like a traditional cobb salad with all the flavors of fresh crunchy lettuce, hard boiled eggs, and bacon but in a chopped form and topped with a delicious homemade honey dijon ranch dressing. I like to make a big batch of the dressing and keep in a mason jar throughout the week to use on my salads, it is that good! I like to top mine with crumbled goat cheese but Blue cheese or cheddar works too!

Spring Chopped Cobb Salad

Ingredients

  • 1 cup Boston bibb lettuce or spring mix, chopped
  • 1 cup snap peas, chopped
  • 1 cup cucumbers, chopped
  • 1 cup corn (off the cob)
  • 1/2 cup radishes, chopped
  • 1/4 cup diced onion
  • 4 hard boiled eggs, chopped
  • 1/2 cup crumbled goat cheese
  • 1/4 cup bacon chopped finely or bacon bits

For dressing

  • 1 cup plain Greek yogurt
  • 1/4 cup olive oil
  • 1 Tbsp Dijon mustard
  • 1 Tbsp honey
  • 1 tsp Worcestershire sauce
  • 1 tsp minced garlic
  • 1 Tbsp chopped dill
  • 1 tsp onion powder
  • salt/pepper
  • squeeze of fresh lemon juice

Directions:

1.) In a large salad bowl, add all chopped vegetables, eggs, cheese and bacon.

2.) In a smaller bowl, or mason jar, add all of the dressing ingredients. Mix well. I like to use my frother (linking here) to help it get a creamier consistency.

3.) When ready to serve, top with dressing and mix together.

Lettuce, snap peas, radishes, corn, cucumber, bacon, hard boiled eggs and cheese are chopped to perfection so you get a test of everything in one bite and topped with a honey dijon ranch dressing. This is one of my favorite spring salads for lunch or dinner. Enjoy as is or top with chicken or steak!

Ingredients
  

  • 1 cup boston bibb lettuce or spring mix chopped
  • 1 cup snap peas chopped
  • 1 cup cucumbers chopped

As the weather starts to warm up, I get so excited for salad season! Pasta salads, fresh vegetable and fruit salads with all the seasonal produce! That’s why I’ve decided to start a new weekly segment called “The Wednesday Salad” where each week I am going to bring you a new salad recipe to add to your menu. This spring orzo salad is a great addition to grilled chicken, steak or fish or just eat it as is for a light lunch.

And the dressing… omg! I can’t take credit for the dressing. I saw someone on Tik Tok make this crispy shallot vinaigrette and I’ve been putting it on all my salads ever since! So I decided to put it over some orzo, fresh asparagus, peas, arugula and cucumber for this spring orzo salad. You will love it!!

Spring orzo salad

Ingredients

  • 1 box of orzo
  • 2 handfuls of fresh arugula
  • 1 cucumber, diced
  • 1 cup of frozen peas, defrosted
  • 2 bunches of asparagus, roasted
  • 1/2 cup crumbled feta cheese

For the dressing:

  • 1 shallot diced
  • 1/3 cup olive oil
  • 2 Tbsp red wine vinegar
  • Squeeze of some fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • salt/pepper

Directions:

1.) Start by making the dressing. Heat up some olive oil in a pan and add the diced shallots. Cook the shallots until they are a nice golden brown color.

2.) Pour the oil and the shallots from the pan into a glass jar or bowl. Add the other dressing ingredients, and mix well. I like to use my little handheld coffee frother to whisk it all up.

3.) Set aside the dressing in the refrigerator and bring a large pot of water to a boil.

4.) Once boiling, add the package or orzo and cook until al dente.

5.) Strain the water from the orzo.

6.) In a large bowl, add the orzo, arugula, cucumbers, asparagus, and peas.

7.) Add some crumbled feta and top with dressing.

8.) Mix together and serve.

 

This salad keeps well for a few days in an airtight container in the refrigerator. I like to serve cold.

This spring orzo salad is a light side dish that pairs great with grilled chicken, steak or fish. Or just eat on it's own for lunch. Orzo is topped with roasted asparagus, peas, arugula and diced cucumber then topped with feta cheese and a crispy shallot vinaigrette.

Ingredients
  

  • 1 box orzo
  • 2 handfuls fresh arugula

  • 2 bunches asparagus roasted
  • 1/2 cup feta cheese crumbled

For the dressing

  • 1 shallot diced
  • 1/3 cup olive oil

  • 1 tsp dijon mustard
  • 1 tsp honey
  • salt/pepper to taste

Instructions
