These pumpkin chai pop tarts are crispy, flaky, and filled with a warm pumpkin pie filling and topped with a chai glaze.
As an ode to Taylor Swift and in celebration of the release of “The Life of a Showgirl” I decided to make a batch of homemade pop tarts. We all know that Taylor loves to bake, from sourdough, to pop tarts and her beloved chai sugar cookies. These pumpkin chai pop tarts are a mash up of just that, and with a pre-made pie crust, they are easy to make and delicious for fall! Scroll down for my recipe.

Pumpkin chai pop tarts
recipe makes 4 pop tarts
Ingredients:
- 2 rolls of refrigerated pie crust
- 1 cup pumpkin puree
- 1/2 cup light brown sugar
- 2 tsp pumpkin pie spice
- 1 egg
- 1/4 tsp salt
For the frosting
- 1 cup confectioner’s sugar
- 2 tbsp chai tea
- 2 tbsp heavy whipping cream
- pinch of pumpkin pie spice
Directions:
1.) Preheat the oven to 400 degrees F.
2.) On a lightly floured surface, roll out the pie crust. Cut into 4 squares or you can use fun cookie cutters for shapes if you’d like.
3.) Line a baking sheet with parchment paper and place 4 of the squares onto the lined baking sheet.
4.) In a mixing bowl, mix together the pumpkin puree, brown sugar, pumpkin pie spice, egg and salt.
5.) Use an ice cream scoop or spoon to scoop 1 mound of the pumpkin filling and place in the center of each square of dough, leaving about 1/2 inch of the edges empty.

6.) Cover each square with the remaining squares of pie crust and use a fork to pinch the edges together.
7.) Brush the edges with an egg wash (1 egg and 1 tbsp water).
8.) Bake in the oven until the edges are golden brown, about 10-12 minutes.

9.) While the poptarts are baking, prepare the icing, prepare the icing. In a small mixing bowl, add the powdered sugar, chai tea, heavy whipping cream and pumpkin pie spice. Mix until smooth. If the icing is too runny, add a little more powdered sugar.

10.) Remove the poptarts from the oven and drizzle a spoonful of icing on top of each pop tart. Optional – sprinkle with a brown sugar, pumpkin pie spice or sprinkles.
Enjoy!!!
