These crock-pot smothered pork chops with apples and stuffing is the ultimate fall or winter comfort meal for a busy weeknight.
This dinner recipe is one that my mom used to make growing up and now I make it for my own family. Once the air starts getting a little cooler and those honeycrisp apples are in season, I start to crave it. Pork chops are covered with delicious cinnamon apples and a hearty stuffing and you can just set your slow cooker and forget it! Sharing my recipe below.

Crock-pot smothered pork chops with apples and stuffing
Ingredients:
- 1 pack of pork chops (you can do boneless or bone in)
- 3 large Honeycrisp apples, diced
- 1 teaspoon onion powder
- 1 1/2 teaspoon cinnamon
- 1/2 cup apple juice or broth
- 1 package stuffing mix
- 4 Tablespoons butter
Directions:
1.) Lightly spray the bottom of the crock-pot with some non stick spray then place the pork chops in the crock-pot.
2.) Add the diced apples, onion powder, cinnamon and juice or broth.

3.) Set to low cook for 4 hours.
4.) Add the butter to the crock-pot, stir in the stuffing mix and let set for another hour.

Serve over roasted vegetables and enjoy!

January 11, 2026 at 7:52 pmThis was SO good. A perfect winter evening supper. I added some chopped onion and substituted thyme for the cinnamon (to make it a bit more like my mother’s Thanksgiving stuffing and it was delicious. I didn’t even make a side – it was plenty filling enough. My only note is that the pork chops hadn’t quite cooked through after 5 hours (four hours before adding the stuffing and one hour after) so I turned the heat up to high and cooked for another half hour. That could be my crockpot though. No complaints whatsoever, just to let anyone thinking of making it know they may need to allow more time. I’ll be making this again.
