These cherry chocolate chip muffins are delicious, sweet and the perfect amount of pink for Valentine’s Day or a cute brunch.
It seems like cherries are having a moment right now aren’t they? I love anything cherry flavored and so do my boys. Since February is the month of sweets, I wanted to make a little pink treat to make them feel special. I decided to add some chopped maraschino cherries to a basic muffin recipe to make a sweet pink muffin. Maverick, my youngest, saw me in the kitchen and he came right over to help as always. He had the idea to of course add chocolate chips so that’s why we call these Mav’s Cherry Chocolate Chip Muffins.

The combination of cherry and chocolate is just decadent. These cherry chocolate chip muffins are great in the morning or as a little afternoon pick me up with a cup of coffee. Serve for Valentine’s day to show your loved ones how much you care or at a fun brunch or tea party.

Mav’s Cherry Chocolate Chip Muffins
Ingredients:
- 1 1/2 cups flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1/2 tsp almond extract
- 1 jar (10z) of maraschino cherries, drained, stems removed and chopped.
- 1 cup chocolate chips
Directions:
1.) Preheat the oven to 375 degrees F.
2.) Line a muffin tin with cupcake liners or spray with baking spray.
3.) In a mixing bowl, stir together the flour, sugar, baking powder and salt.
4.) In a smaller bowl, whisk together the egg, milk, vegetable oil and almond extract.
5.) Add the wet ingredients to the bowl with the dry ingredients and mix together.
6.) Fold in the cherries and chocolate chips.
7.) Fill muffin cups with batter about 3/4 cup full.
8.) Bake for about 15-17 minutes (I like to put a toothpick in the center and if comes out clean then they are done) then remove and let cool.

- 1 cup chocolate chips
Instructions

- In a mixing bowl, stir together the flour, sugar, baking powder and salt.
- In a smaller bowl, whisk together the egg, milk, vegetable oil and almond extract.
