I’m on a peach kick right now and obsessed with adding fresh ripe peaches in my salads. This peach arugula salad is the perfect for a light summer lunch or dinner or serve for brunch. Peach Arugula Salad

Peach Arugula Salad
Peppery arugula, ripe summer peaches, goat cheese and candied nuts make this salad a burst of flavor. It's fast to whip together if you're looking for an eye catching and healthy dish. Add some grilled chicken to make it a complete meal or serve with sourdough or sliced baguette as an appetizer or side.
Ingredients
- 5 oz package of arugula
- 3 ripe peaches
- 8 0z goat cheese
- 1 cup candied nuts (peacans or walnuts)
- balsamic glaze
Instructions
- Rinse your arugula and let dry.
- Slice peaches into 1 inch wedges.
- In a bowl add the arugula, peaches, goat cheese and candied nuts. Toss.
- Drizzle the top with balsamic glaze. Serve.
