I’m on a peach kick right now and obsessed with adding fresh ripe peaches in my salads. This peach arugula salad is the perfect for a light summer lunch or dinner or serve for brunch. Juicy peaches pair nicely with bitter arugula, creamy goat cheese and candied nuts. Scroll down for my Peach Arugula Salad Recipe.

Peach Arugula Salad
Peach Arugula Salad
Peppery arugula, ripe summer peaches, goat cheese and candied nuts make this salad a burst of flavor. It's fast to whip together if you're looking for an eye catching and healthy dish. Add some grilled chicken to make it a complete meal or serve with sourdough or sliced baguette as an appetizer or side.
- 5 oz package of arugula
- 3 ripe peaches
- 8 0z goat cheese
- 1 cup candied nuts (peacans or walnuts)
- balsamic glaze
- Rinse your arugula and let dry.
- Slice peaches into 1 inch wedges.
- In a bowl add the arugula, peaches, goat cheese and candied nuts. Toss.
- Drizzle the top with balsamic glaze. Serve.
